When Do Bears Actually Hibernate?

Just wondering when the bears in Algonquin actually start hunkering down for the winter?  For a mild start to a winter like this, would the bears still be active at this time?

It's all about the food now, not the temperatures.  I have trail camera pictures of a bear near my house up to December 3rd in the snow a couple of years ago, but he was feeding in a corn field. Most bears would have gained all of their weight by now and any activity would likely have a negative calorie balance unless they found a particular rich food source.  Just from my experience though, I'm not a biologist.
