I've used the same Eureka 115L canoe pack for many years now and have no complaints (but also very little to compare it to). I take nowhere near 115 liters worth of gear, but because I have a kayak on my shoulders I can't have the top of my pack any higher than those shoulders - ideally a bit below in fact. The Eureka is 27 inches wide and 13 inches deep, which makes that easy.
It's a waterproof pack, but that's somewhat irrelevant for me. My gear is all stowed in dry bags for starters, and when I'm on the water those dry bags are in dry hatches. So I guess if I could find an equivalent pack without the waterproofness (if that translates to it being a lighter pack) that would make sense.

I can't join the Express, but I might well see your group there. I'll be on White Partridge for a night during your proposed dates (coming in from the direction of Dickson). If you see a kayaker on the water, that's pretty much guaranteed to be me!

Lauder's the right general size, but finally a lake too far North. Kiosk no. Way too big.
One of the alternate names for this lake on Jeff's map includes something seen in my image.

There are a few (campsite) lakes within the park boundaries further North than this lake... but only a few.

Right after the moose I shot another video in which I stated I was on Welcome Lake - while sitting on a Merchant's Lake campsite.
What I'm saying is that sand is confusing. You at least have the excuse that you weren't there.

The May long weekend isn't as crazy as other long weekends. Black flies (maybe), unpredictable weather and cold water help thin the crowds.
As others have said, Louisa is a beautiful lake. Instead of going in through Smoke you could go through Rock and do the 'classic' Louisa - Harry - Welcome - Pen loop, and maybe pop down into Clydegale for a night depending on how booked the lakes are.
You could also take the Opeongo water taxi, which is a great way to get deep into the park quickly, then either do a loop through Happy Isle / Otter Slide / Big Trout (if you're lucky maybe you can book Shippagew, although that's probably unlikely for the May long weekend), or a longer loop through Happy Isle / Merchant / Big Trout / La Muir / Hogan / Big Crow / Proulx.

The Mangotasi sites aren't great from what I recall (but that's based entirely on looking at them while paddling past a time or three - I've never camped there). Biggar and Three Mile, on the other hand, are beautiful lakes with some really nice sites - my advice would be to spend a night on each.
Wind will only potentially be a concern on your way back to the access point, as it's almost always blowing west to east. North Tea can be not fun on a windy day, that's for sure.
I've taken both portages between North Tea and Manitou and yet have zero recollection of a waterfall. So maybe all of my memories and opinions are suspect...
